Cold Rice Noodles

Chinese name: 凉皮Liang Pi

The most popular snack of Xian should be Liang Pi, a kind of cold steamed rice or flour noodles. This is a typical food of Shannxi area and also deeply favored by Xianers for a long time. Generally, there are two kinds of Liang Pi here—Mi Pi (米皮) and Mian Pi (面皮), and the difference between them is the material. The previous one, Mi Pi, is made of rice, while the latter is flour. From the different cooking method, we can divide Mian Pi into two kinds: Gan Mian Pi and Zheng Mian Pi. Both of them are very tasty. Compared with Mian Pi, Mi Pi is tasted a little softer and seemed whiter in color. While eaten, they are mixed with several kinds of seasonings including special hot red pepper, sauce, salt, vinegar, mashed garlic and bean sprout. In Xi'an, it's typically the girl's favor.

You should never miss the chance to enjoy the fragrant Rou Jia Mo when having Liang Pi. Rou Jia Mo is a kind of toasted wheat flour flat bread stuffed by finely braised and chopped pork. The combination of these two kinds of foods is said to be the ideal dinner for the locals all the year round, just costing no more than CNY10. In fact, the tasty La Zhi Rou (cooked pork) is a kind of time-honored Xian snacks, especially cooked by the Fan's which has a 60 years' history.

Guo Kui, a kind of baked wheaten cake, is a traditional homely food in Shaanxi Province. There is a short story of Guo Kui. During 624 to 705 in Tang Dynasty, the people were building the immense tomb for Emperor GaoZong, Li Zhi, and the Empress Wu Zetian. In this huge and hard project, the labours did not have any condition to cook, then an idea came to their minds,"why can't we use the helmet to bake the stiff flour paste". Helmet, in Chinese, we say, "tou kui", so , this pancake has the name " Guo Kui". And in the Tang Dynasty, the capital was today's Xi'an, and the people in Qian Xian inherited this method successfully. After many years of innovation, now it has it's own special flavors. Generally, Guokui is eight inches in diameters, six inches in height, shape looking like chrysanthemum with several layers and lingering aftertaste.You can buy it both in the restaurants and in the supermarkets.
