年产10万吨低醇啤酒厂设计

摘要

本设计依据啤酒成熟可靠的工艺,结合国内啤酒工厂的实际,在不添加蒸馏设备的情况下,着重通过工艺的改变及辅料的选择,生产出具有风味特色的低醇啤酒。提高啤酒质量,风味及其经济合理性的原则进行设计。

本设计选用优质麦芽,精白大米,新疆酒花颗粒及优良的啤酒酵母来酿造8度淡色啤酒及高浓稀释方法生产7度和6度淡色啤酒.设计生产能力为年产10万吨,主要产品有瓶装啤酒,罐装啤酒及桶装鲜啤.副产品有二氧化碳,商品干酵母,麦糟饲料等。

设计中粉碎采用润湿粉碎,糖化采用双醪一次煮出糖化法,有利于提高原料的利用率及缩短时间,采用外夹套加热进行糊化,糖化.用内加热煮沸锅煮沸.采用露天圆锥形发酵罐发酵,使得生产管理方面降低了成本,包装线采用联合自动化系统,从而节省了劳动力,财力.这些技术和工艺都是成本设计力求提高产品质量和效益,降低生产消耗和投资的重要因素,同时啤酒厂的废水处理可以采用下列生物处理方法:活性污泥法,生物滤池法和氧化糖法,达到了现代化大型啤酒厂的规模及指标。

本设计的重点工段是糖化工段,对其进行了较为详细的设计,计算.通过整个啤酒厂的技术经济分析,评价,证明了本设计的合理性和可行性。 关键词:低醇啤酒,原料,清洁生产,糖化工艺
